Banana-Almond French Toast with Blueberries Recipe

Ingredients
- 4 ripe medium bananas
- 85g (% cup) almond butter
- 360ml (1% cups) unsweetened soya milk
- 1 teaspoons pure vanilla extract
- teaspoon ground cinnamon
- 8 slices salt-free whole-grain sprouted bread
- 130g (1 cup) blueberries
- 60ml (% cup) date syrup
- Preheat the oven to 110°C (225°F)
- In a blender or food processor, combine three of the bananas with the almond butter, soya milk, vanilla, and cinnamon, and blend until smooth.
- Transfer the batter to a shallow bowl. Dip each piece of bread in the batter, turning to coat both sides.
- Heat a griddle or large cast-iron frying pan until hot. Place the French toast on the hot griddle and cook until golden brown on both sides, turning once with a spatula, about 3 minutes per side.
- Keep the cooked French toast warm on a heatproof platter in the oven while you prepare the rest of the pieces. Thinly slice the remaining banana. Serve the French toast topped with the banana slices, blueberries, and a spoonful of date syrup.
